Dined at Kushiro at The Peninsula on 31 Dec 2025 (NYE), returning after a great experience in Feb 2024. The HKD 3,080 per person NYE pricing was understood, but the quality delivered did not justify it. Since our last visit, the chef has changed from a Japanese chef to a Cantonese chef with a background in Chinese cuisine. To be clear, nationality is not the issue — just days later, we had an excellent omakase by a Hong Kong chef. The problem here is the lack of understanding and execution of Edomae omakase. While the crab & caviar bowl was very good, the rest was hit and miss. The sushi was just okay, the abalone sauce was thick but bland, the kuruma ebi slightly overcooked, and the uni was fishy, which is unacceptable at this level. Some dishes, like a lobster Wellington, and pigeon soup felt out of place and confusing. Overall, this was a clear drop in standard and not worth the price. We will not be returning.
